Scientists around the world simultaneously showed that saturated fat—the kind in butter and lard—increases both “bad” LDL cholesterol and “good” HDL cholesterol, making it similar to carbohydrates overall but not as beneficial to health as polyunsaturated fats from nuts and vegetables.

In the freezer, well-wrapped butter can last up to a year, after which its flavor and quality will be compromised. It may also develop freezer burn. In the refrigerator, well-wrapped salted butter can last up to five months without spoiling. Salt is a preservative that prevents microbial growth and extends shelf life.

Ghee is made by melting regular butter. The butter separates into liquid fats and milk solids. Once separated, the milk solids are removed, which means that ghee has less lactose than butter. Traditionally, ghee has been used as cooking oil, an ingredient in dishes, and in Ayurveda therapies.
